Captain Stone Johannesburg Rum, vanilla and oak is predominant and immediately identifiable. Smooth caramel and banana become evident in the middle, and a slight char, imparted by the Bourbon barrel, rounds the taste experience.
Stuart Stanley Stone was a Canadian Rum Runner and Captain of the Malahat, a five-mast schooner that serviced the west coast Rum Row. This was where the supply ships would anchor just off the American maritime border during the prohibition era. This rum is a salute to his sense of adventure and opportunism in breaking someone else’s rules but not his own.
Distilled in our pot belly still, using 6 plates and reflux in a compound single column setup on a single batch basis. Specific cuts are made in the hearts and tails to achieve the flavour profile for Captain Stone Johannesburg Rum. The rum distillate is aged in once-used Bourbon barrels to achieve the smooth characteristics of our rum. Each bottle comes from a single batch and a single barrel, maintaining its unique profile.
